North Karnataka Style Girmit (Puffed Rice Masala) Recipe - A Quick Snack
Girmit recipe is very popular street food from North Karnataka prepared from puffed rice or kadlepuri or mandakki. This snack recipe is extremely popular in Hubli-Dharwad region of Karnataka also known as masala mandakki in other places. The combination of Girmit and Green Chilli bajji is very popular. It is a mouth-watering dish which is light and can have with tea.
Preparation time: 30-45 minutes
Ingredients
2 cups Puffed Rice (Unsalted)
1 spoon Tamarind paste
2 small finely chopped Onions
1 small finely chopped Tomato
2 Green Chilli
1 spoon Jaggery
2-3 spoons Roasted Gram Powder
4-5 crushed Garlic
3-4 spoons Oil
5-6 Curry leaves
Half spoon Mustard seeds
Half spoon Cumin seeds
Pinch of Asafoetida/Hing
Coriander leaves
Half spoon Turmeric powder
1 spoon Lime Juice
Steps
Girmit Masala
1) Add 4 tsp oil in a kadai and add 1 spoon mustard, half spoon jeera, 5-6 crushed garlic and 5-6 curry leaves. Allow it to splutter.
2) Add 1 finely chopped onion and 2 green chillies. Saute well.
3) Add 1/4 spoon turmeric and half spoon salt. Saute for a minute.
4) Add half cup/3-4 spoons tamarind extract and half spoon jaggery. As per the taste
5) Let it boil for 3-5 minutes until it looks like paste.
Serving procedure
1) Add 2 cups churumuri in a mixing bowl.
2) add 1 small finely chopped onion, 1 finely chopped tomato and 3 tsp roasted gram powder.
3) Add 2 spoons Girmit Masala
4) Give a rough mix.
5) Garnish with coriander leaves and Sev/Mixture.
6) Serve Girmit with hot chilli/mirchi bajji.
Tips: Add Girmit Masala just before serving it. Otherwise, the puffed rice will become soft.
